Storing firewood properly is key. Poor storage is a sure-fire way to have bad tasting smoke and a whole host of problems. We recommend storing your wood elevated, outdoors, with a pallet underneath, or on a shelf. See below for examples:

What is "Seasoned" firewood?
Seasoning is the process by which firewood goes from "Green" as in fresh, to being "seasoned", or aged and ready to burn. In short, it's the storage of firewood in stacks specifically arranged to encourage airflow and sun exposure for extended lengths of time.

Is all wood suitable for smoking?
Good smoking wood is hard to find, can't I just use left over wood from my carpenter? Aren't all woods OK to use?
Simply put, NO. Not all wood is suitable for smoking, and here's why:
The following attributes are ABSOLUTELY NECESSARY for good smoking wood:
- It's properly seasoned (read about seasoning here)
- Proper humidity levels for smoking
- Free from nails, chemicals, and pests.
